Gelatin is a glutinous material obtained from animal tissues by boiling. It has used for centuries to form sculptural food displays with a variety of ingredients and cuisines. It went from being the food of the upper classes—a signature of opulence and more than one kind of refinement—throughout history to being an artistic outlet for middle-class 20th century housewives.

Using strictly digital methods, I created a series of jellies as a practice of replicating and hyper-perfecting this peculiar art. This project is ongoing, and I intend to expand my practice to other dishes to create a digital banquet.
